Populis took red grapes, pressed half of them like a rosé, then poured that juice back over the rest. The result is a red that drinks like it's on vacation: light, juicy, raspberry and wild strawberry, barely any tannin.

Notes
Made by a method Populis calls the 'reverse saignée': about half the grapes are pressed off as rosé juice and added back to a tank of destemmed fruit, lowering concentration for a lighter, snappier red. Old-vine, dry-farmed Mendocino County fruitone retailer lists it as unfiltered with low sulfites.
