What you'll taste
Testing
The pours
ellow pear, lemon zest, white stone fruit, with a touch of toasted hazelnut and bitter almond.
Tempranillo-based Rioja aged 12 months in American oak. Cherry, raspberry, vanilla, baking spices
Citrus, white flowers, a dusting of chalk, and zippy, mouth-watering acidity.
fermented with wild yeast and aged in a large French foudre. Plum, dark chocolate, & violets.
The pairings
The wine's acidity keeps the buttery cheese from getting heavy and lines up with Fontina's subtle earthiness.
The American oak's vanilla echoes the cheese's caramel notes, & the wine's acidity cuts through the richness.
The goat side is bright and tangy; the sheep side is sweet & grassy; together, they finish almost grape-like.
Pinotage has a natural smoky character that meets the applewood smoke head-on, no squabbling.
